Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prep the veggies: Slice carrots, zucchinis, and bell pepper, and arrange them on a large baking sheet. Add onion wedges and minced garlic.
  3. Season the chicken: Place chicken thighs/breasts on the same baking sheet. Drizzle olive oil over the chicken and veggies.
  4. Mix the seasoning: Combine paprika, oregano, garlic powder, salt, and pepper in a small bowl. Sprinkle evenly over the chicken and vegetables.
  5. Bake: Place the baking sheet in the oven and roast for 25-30 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F / 74°C) and the veggies are tender.
  6. Serve: Garnish with fresh parsley (optional) and serve warm. Enjoy with rice, quinoa, or crusty bread for a complete family meal.
